Healthy Homemade Jello

Ingredients

  • 4 cups fresh squeezed fruit juice or coconut water
  • 3 TBSP grass fed gelatin (add 1 more TBSP if you like your jello really firm)
  • 3 TBSP raw honey (optional)

Instructions

  1. Pour juice in a saucepan
  2. Sprinkle gelatin powder over juice and stir
  3. Turn the heat on medium-low and bring the juice to a simmer
  4. Mix until gelatin is dissolved
  5. Turn off heat and add honey if using
  6. Pour into an 8×8″ square baking dish
  7. Refrigerate until jello is set, about 2 hours

Cranberry Orange Granola

Yields 4 1/2 cups

Ingredients

  • 2 TBSP coconut oil, melted
  • 1 TBSP butter, melted
  • Zest of 1 1/2 oranges
  • Juice of 1 orange
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups rolled oats
  • 1 cup slivered almonds
  • 1 cup dried cranberries

Instructions

  1. Preheat the oven to 350 degrees
  2. In a large bowl mix melted butter and coconut oil with maple syrup, orange juice, orange zest, cinnamon, and salt.
  3. Mix in the rolled oats and almonds until it has absorbed the mixture.
  4. Line a baking sheet with parchment paper and spread out the mixture evenly on the sheet
  5. Bake at 350 degrees for 15 minutes or until lightly browned.
  6. Let cool for 10 minutes

Whole Wheat Muffins

Yield: 12 muffins

Ingredients

Dry ingredients:

  • 1 1/2 cups whole wheat flour (freshly milled)
  • 2 tsp baking powder (aluminum free)
  • 1/2 tsp sea salt
  • 1TBSP finely shredded lemon peel or 1/2 TBSP dried orange peel*
  • 1/2 TBSP poppy seed

Liquid ingredients:

  • 1/4 cup coconut oil or butter, liquified
  • 1 beaten egg
  • 1/2 cup milk
  • 1/2 cup honey

Instructions

  1. Preheat oven to 375 degrees
  2. Mix dry ingredients
  3. Add in liquid ingredients
  4. Grease stainless steel muffin pans or line with baking cups- fill 2/3 full
  5. Bake at 375 for about 15-20 minutes, depending on the muffin tin size

Note: For variation add 1/2 cup shelled sunflower seeds to the flour mixture and leave out lemon/orange zest and poppy seeds. Also could add in 2 cups shredded sharp cheddar cheese.

* For more lemon or orange flavor, squeeze in some lemon juice or orange into the batter.

Raw Carob Balls

Yield: 2-3 dozen treats (depending on how big you make them)

Ingredients

  • 2 cups raw cashews, pecans, or almonds
  • 3/4 cup water
  • 3 cups organic rolled oats
  • 1 cup local, raw honey
  • 1 cup unsweetened organic coconut shreds
  • 1 cup organic raisins
  • 1/2 cup carob chips or chocolate chips

Instructions

  1. Using a blender, blend nuts and water until smooth
  2. Blend in honey
  3. Pour blended mixture over dry ingredients and mix together (with a spoon) until thoroughly mixed
  4. Form 1 inch balls. Refrigerate or freeze for hals an hour before serving

Date Treats

Ingredients

  • 1-2 lb medjool dates
  • 1/2 cup almond butter (or other no sugar nut butter)
  • 1/4 cup whole or cracked golden flaxseed (we often leave the flaxseed whole)
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup honey
  • 1/4 tsp sea salt

Instructions

  1. Mix together and use for stuffing dates.

Milkshake

Ingredients for one large glass

  • 3/4 cup milk
  • 1 cup ice
  • 1 TBSP maple syrup
  • 1/2 tsp vanilla
  • 1/8 cup cocoa powder

Ingredients for a blender full

  • 3 cups milk
  • 4 cups ice
  • 4 TBSP maple syrup
  • 2 tsp vanilla
  • 1/2 cup cocoa powder

Combine all ingredients and blend until totally smooth.

Smoothie Pops!

Ingredients

  • 1/4 can of coconut milk
  • 3/4 cup water
  • 1 orange, peeled
  • 2 bananas
  • 1 1/2 cups berries (fresh or frozen)- blueberries, strawberries, raspberries, or try 1 1/2 cups mango

Instructions

  1. Blend and pour into popsicle molds- enjoy!

Note: For every can of coconut milk, I usually take 1 can and pour it into a quart jar and add 2 cups of water… then 1 cup of this diluted milk works great for 1 blender smoothie, leaving me with 3/4 of a quart left for future smoothies.

Layered Bean Dip

You make this your own way… here are some suggestions:

  • start your first layer with beans… mash them ahead of time and cover the bottom of a cake pan–then add layers of any ingredient you enjoy
  • organic sour cream
  • salsa
  • guacamole
  • shredded organic cheese
  • sliced olives (we buy these canned, if at all)
  • green chilis
  • diced green onions
  • chopped tomatoes
  • hot peppers (not at my house, but for spice lovers this is a must)
  • shredded lettuce (only add in lettuce if you are sure this will be eaten in one evening– the lettuce and tomatoes might not store well)

What else? Maybe add in layers of spice, like garlic powder or cayenne.

We try to later each item at least two times with a final of cheese on top.

Oatmeal Coconut Granola

Ingredients

  • 1 1/2 cups old fashioned oatmeal
  • 2 TBSP coconut oil, melted
  • 1/2 cup maple syrup (could reduce this)
  • 1 cup SunSpire All Natural Vegan Carob Chips OR dark chocolate chips
  • 1 cup organic unsweetened shredded coconut
  • 1 tsp vanillla extract

Instructions

  1. Preheat oven to 350 degrees
  2. Mix all ingredients and pour into lightly oiled 9 inch baking dish.
  3. Bake for 25 minutes or until golden brown

Oat Treats

Ingredients

  • 1 1/2 cups organic oats (dry oatmeal)
  • 1/2 cup local raw honey
  • 3/4 cup natural peanut butter (no sugar added)
  • 1 tsp cinnamon
  • 1/2 cup dark chocolate chips
  • 1/4 cup golden flaxseed
  • 1/2 cup shredded organic coconut

Instructions

  1. Mix well, form into 1 inch balls
  2. Roll in shredded coconut
  3. Chill and serve
